Kidney bean salad

Sequel to the Bean Epic. This time it's Kidney beans from a can.
I feel a bit like the guy from that old joke:
- Doctor, everyone says I'm abnormal because I really love pancakes.
- There's nothing abnormal about that. I love pancakes too.
- Well, then come to my place. I have two closets full of pancakes.
Well, I have two closets full of beans. And a third one with soymeat.

Nettle shake, but not necessarily

First shake was made, or at least described, in 1885, but it was different from today's shakes. It was a sweetened alcoholic drink made with whisky, eggs, and milk, somewhat similar to eggnog (and here's my "coconogg").

INGREDIENTS:
1 ripe mango
1 ripe banana
1 tablespoon of ground nettle
300 ml of oat milk (or any other milk)
1 teaspoon of turmeric
optional agave syrup or other sweetener
50 g of peanut butter
juice of half a lemon

Coconog

Punch, punch, mulled wine, and similar beverages. Somehow in Poland, drinks like these, alcoholic or non-alcoholic, are not really a part of the Christmas tradition. It's completely different from Anglo-Saxon countries, from Canada, through the USA, England, to Germany, where all kinds of punches, mulled wines, and eggnogs are a mandatory part of the Christmas menu. Christmas markets are full of all sorts of mulled drinks, and it seems to be a favorite pastime of German retirees to sip on them.

TSP, TVP, soy meat

Dodane przez rude - pon., 05/15/2023 - 09:57

Textured soy protein (TSP), also known as soya meat (doesn't it sound better?), is probably the oldest strictly vegan/vegetarian product produced in the West. Today, it is underrated, somewhat forgotten, old-fashioned, or unfashionable, despite being very interesting and fitting in with current culinary trends such as zero waste, because it is made from waste. TSP is obtained from waste soybean oil cake, using a process called extrusion, which involves subjecting it to high temperature and pressure simultaneously.

Famous pimp and celebrity from St. Pauli has passed away

On April 25th in Hamburg, at the age of 70, Klaus Barkowski, also known as "Beautiful Klaus," the world's most famous pimp, died, recently popularized by the Amazon Prime series "Luden." Barkowski was one of the central figures of the Nutella Gang, which in the late 70s and 80s displaced the pimp gang GMBH from St. Pauli and shaped the current form of the Reeperbahn and the entire sex industry in St. Pauli.

Miso bean soup

I already mentioned in the recipe for a meatless miso soup that it is a similar culinary tradition to Polish sourdough żurek. The base for Polish sourdough is wheat or other grains, while miso uses soybeans with the addition of grains, usually rice. However, in both cases, we use the same process: one of the most amazing and important fermentation processes in cooking.

INGREDIENTS:
1 onion (100 g)
500g cooked red beans.

Fasting miso soup

What connects Poland and Korea? Fermented foods. Fermented cabbage, to be exact. Fermented cabbage that saved the lives of our peasant ancestors. Fasting soups made with fermented vegetables like sauerkraut and sour rye soup were a staple of the Polish peasant diet.

Miso and kimchi are Asian fermented foods similar to sauerkraut and sour rye soup. They are used in traditional fasting soups of the Polish peasantry.

Something like hummus

Dodane przez rude - pon., 05/08/2023 - 12:55

Actually, it's not hummus. But it's an example of how dishes change and evolve. Hummus is probably something that everyone knows today. I suspect that if studies were done, hummus would definitely be one of those dishes that, as a result of globalization, spread from its culinary refuge to the whole world. And it's something whose significance and importance we don't fully understand yet.

How using ready-made meals

Dodane przez rude - wt., 05/02/2023 - 16:40

Breakfast is the most important meal of the day. However, one does not necessarily feel like cooking in the morning... or at all, really. In fact, I don't like cooking for myself unless I have a new idea for a recipe, a new taste that I want to try out. Otherwise, cooking for myself is more often a burden than a pleasure. Plus, after a week-long party where I cooked for, say, 15 people, I really don't feel like cooking.

Salsa Roja

"If I had to name one product that is most characteristic of the entire Mexican cuisine, I would say 'chili.' And I would probably stir up native Mexicans by saying that because for Mexican cuisine, 'chili' is like snow for Eskimos or Laplanders.
