Scrambled egg, known to everyone as a popular and widely recognized way of preparing and serving eggs, is also described by the term "scrambled," referring to the texture and preparation method. Scrambled egg plant refers to a plant-based version of scrambled eggs, while scrambled eggplant is name for scrambled egg plant made with eggplant, scrambled eggplant. INGREDIENTS: 
- 100g eggplant (peeled) 
- 50g red onion (1 small) 
- 100g canned chickpeas 
- 20g oil 
- 1 tablespoon light soy sauce 
- 1 tablespoon rice vinegar 
- 1-2 tablespoons nutritional yeast flakes 
- Black salt 
- Parsley 
- Plant-based milk (oat-almond milk) 
- Lemon juice (optional)

PREPARATION: 
1. Finely chop the eggplant and generously season it with black salt. Let it sit for a few minutes to release its juices. 
2. Mash the chickpeas with a fork and mix them with nutritional yeast flakes. Dice the onion. 
3. Heat oil in a pan, add the onion, and sauté until it starts to brown. Add the eggplant and cook on low heat, drizzling with rice vinegar and soy sauce. The aim is to partially cook and soften the eggplant. 
4. Add water if needed. Once the eggplant is tender and most of the liquid has evaporated, add the mashed chickpeas and cook on high heat. 
5. Pour in the plant-based milk and remove from heat as soon as the liquid is absorbed and evaporated, ensuring the dish isn't dry. Finally, add chopped parsley, drizzle with lemon juice (optional), and mix.

VARIATIONS: 
- You can substitute chickpeas with tofu. 
- Use other herbs like chives instead of parsley. 
- In season, wild garlic would be a great addition. 
- Fresh or canned tomatoes can be added. Fry tomato slices separately on another pan and place them on the nearly cooked eggplant with chickpeas.

NOTES: 
This dish is born out of necessity, where you explore the contents of your fridge and get creative. Feel free to modify and develop it according to your taste. If I were to include it on my menu, I would definitely make some changes. 
For example, using roasted eggplant and extending the cooking time, which would add complexity to the dish. 
Remember that going to a restaurant means paying for the convenience of having something that might be too complicated to make at home. Also, don't forget to tip and consider leaving a tip for me too. 
SERVING SUGGESTIONS: 
Serve with bread as you would with regular scrambled eggs. 
It would be interesting to serve it in a wrap or tortilla, possibly with a salad or rice. For example, rice, scrambled eggplant, salad, tomatoes, and sauce. You can find a video on my YouTube channel on how to wrap a tortilla
