Noodles laid are almost the cornerstone of Polish cuccina povera, the cuisine of the poor, the folk cuisine. And like most such dishes, they fell out of favor with the enrichment of society.

Funny enough, I used to stumble upon this poor folk dish in fancy vegan restaurants in Warsaw before my departure.

The basic version consists of flour (optionally egg), milk (in my case, plant-based, of course), or even water as a last resort.

This invention is probably as old as bread (and as stale as unleavened bread), meaning dough made from wheat/gluten flour that's baked; here, it's boiled.

Homemade noodles laid, as simple and inexpensive as noodles laid, are an easy way to enrich the menu with new flavors. They require neither much work nor special culinary skills.

In addition to wheat flour, various other flours and ingredients can be added to the noodle dough. Today, I have proposals for two such enriched noodles laid.

Noodles laid with polenta
INGREDIENTS:
150g wheat flour
100g polenta
200ml soy milk (or other)
a pinch of salt

Noodles laid with hemp flour
INGREDIENTS:
100g wheat flour
50g hemp flour
150g soy milk (or other) salt

PREPARATION:
Add both flours and a pinch of salt to the milk, and mix well, preferably with a whisk, to avoid lumps.
Set aside for about 30 minutes.
Scoop the dough with a soup spoon and drop it into boiling water.
After adding the noodles, gently stir them with a plastic spoon to prevent them from sticking to the bottom.
Cook for about 3 minutes.

VARIATIONS:
Various types of flour can be added to the noodles laid, as long as wheat flour or, alternatively, spelled flour, which contains the necessary gluten to give the noodles laid the right consistency, is the base.
REMEMBER! Fear of gluten is one of the dumbest and most harmful dietary religions. It was gluten that nourished humanity.
The dough can also be seasoned with fresh or dried herbs and other spices.

NOTES:
Polenta is fine cornmeal "instant polenta."
Hemp flour should be finely ground. Noodles laid with hemp flour are heavier, firmer, and dark gray.
The consistency of the dough is crucial for noodles laid. If it's too runny, the noodles will fall apart; if it's too thick, they will be too hard.

SERVING:
We can serve noodles laid directly from the water, with a side dish, sauce, salad, etc. Personally, I prefer to take the noodles out of the boiling water and put them into cold water for a few minutes. Then drained from water, I fry them.

Today, this type of noodles has been replaced by ready-made dry pasta. And it would be strange if it were otherwise. The development of productive forces also takes place on a micro-scale of households. We do not realize how important for the development of social relations were washing machines or refrigerators.
This influence was not only emancipatory, as the socialist techno-optimism of the mid-twentieth century proclaimed, but also alienating. The household became an important element of the capitalist market game and a market subject to the same imperialist pressure for total and totalitarian commodification as any other.
The development of productive forces, also micro-forces of household production, creates social relations, but does not determine them.
Less time in the kitchen, thanks to ready-made pasta and similar semi-finished products, means more time to nurture relationships at the table. The development of micro forces of production also opens up opportunities for people who would otherwise lack the time and skills to prepare everything themselves and, for example, use ready-made pesto added to ready-made pasta or inventions like Thermomix with programmed recipes.
The most important part of the chef's work takes place at the table. The essence and purpose of cooking are the experiences and emotions of people at the table. Both individual and social relationships that arise during communal eating.
In Korean, one of the ideograms for "family" depicts a group of people eating together. Sharing meals is very important for building social ties. Hence both family dinners on Sundays and business lunches.
And it does matter for these relationships what food we eat and how. Whether hastily eaten hamburgers in front of the TV or a three-course dinner, not even very abundant but celebrated.
